    Make-Ahead Mashed Potatoes (serves 8-10)

    List of Ingredients

    5 lbs. white rose or russet potatoes
    1 cup sour cream
    2 three-ounce packages cream cheese
    1/2 cup soft butter (melted ok)
    1/2 cup parmesan cheese
    4 oz shredded cheddar cheese
    1 tsp. salt
    1 tsp. pepper

    Recipe

    Peel and cook potatoes until tender, drain well. Mash while hot. Add all remaining ingredients and beat with beater until fluffy. If you don't have an extra large mixer (like a Kitchenaid), mix it in 1/2 or 1/3's. Put in large 3 qt. casserole. Bake uncovered at 350 degrees for 45 minutes. You may make this up to a couple days ahead and keep in frig.
