Perfect Baked Potatoes

Preheat oven to 450 degrees. Scrub and dry potatoes. [Use Russet or Idaho-type potatoes for baking.] Place potatoes without piercing skins on center rack of oven; bake for 1/2 hour. Remove potatoes from oven, and pierce skins with a fork in several places. Return potatoes to oven and lower oven temperature to 350 degrees. Continue baking until potatoes are tender (gently squeeze to determine doneness).
This method makes a crisp skinned, fluffy-textured potato, by steaming the potato pulp first (in its own moisture), then allowing the steam to escape (by piercing the skin) which dries the interior pulp to make it fluffy.
