1/2 cup freshly squeezed lemon juice
1/2 cup canola oil
1/4 cup honey
2 teaspoons Dijon Mustard
1/2 teaspoon fine sea salt
1/4 cup diced Vidalia onion
1 1/2 teaspoon poppy seeds

In an immersion blender or a regular blender, combine the lemon juice, canola oil, honey, Dijon mustard, salt, and onion. Blend until smooth.
Add the poppyseeds and pulse the blender briefly, just enough to disperse them. Pour the dressing into an airtight container and store in the fridge until ready to serve.
Make the salad with spinach leaves and leaf lettuce. Add any salad toppings that you enjoy. Suggestions are Craisins, sunflower seeds, pecan pieces, sliced strawberries, raspberries, mozzarella pearls, and chicken strips. Top the salad with the dressing.
