    Barbecue Swiss Steak

    List of Ingredients


    • 2 lb. round steak, cut about 1/2 inch thick
    • 2 tbs. all purpose flour
    • 2 tbs. salad oil
    • 2 large onions, sliced
    • 2 beef bouillon cubes
    • 1/2 cup chili sauce or ketchup
    • 1/2 cup water
    • 2 tbs. lemon juice
    • 1 tsp. Worchestershire sauce
    • 1 tsp. Dijon mustard
    • Pepper


    Instructions


    1. Trim and discard any fat, cut meat into 4 to 6 serving pieces

    2. Lay pieces on waxed paper, sprinkle with pepper and 1 spoon of flour

    3. Pound flour and pepper into meat

    4. Turn meat over and repeat same

    5. Heat 2 tbs. of oil in a 4 quart kettle over medium-high heat

    6. Add a few pieces of meat at a time and brown well on all sides, remove from heat and set aside

    7. Add remaining oil to pan, add onions and ccok over medium heat, stirring often until soft

    8. Return meat to pan

    9. In a small bowl, stir together bouillon cubes, chili sauce, water, lemon juice, Worchestershire sauce and Dijon mustard

    10. Pour over meat

    11. Cover and bake in a 325 degree oven for 1 1/4 hours or until meat is tender when pierced

    12. Transfer meat to a platter and spoon onions and sauce over meat
