Stuffed Green Peppers

- 4 medium green peppers
- 1lb. lean ground beef
- 1/2 cup onion, finely chopped
- 2 cups tomatoes, diced
- 1 tbsp. Worchestershire sauce
- 1/2 cup rice, uncooked
- 1 can (8 oz.) tomato sauce
- 1 can (10 0z.) condensed tomato soup
- 1 cup cheddar cheese, shredded
- 1 tsp. salt
- 1 tsp. pepper
Instructions
- Bring a large pot of salted water to a boil.Cut the tops off the peppers and remove seeds
- Cook peppers in boiling water for 5 minutes, drain and sprinkle salt inside each pepper
- In a skillet, saute beef and onions until meat is browned and onions are soft
- Stir in tomatoes, rice and Worchestershire sauce, cover and simmer for 15 minutes until rice is tender
- Remove from heat and stir in cheese
- Stand peppers upright in an ungreased baking dish (6"x6"x2")and stuff with the beef and rice mixture
- Combine tomato soup and tomato sauce, stir well and pour over peppers
- In a 350 degree oven bake covered for 20 minutes and then uncovered for an additional 15 minutes
