    List of Ingredients


    • 6 eggs
    • 1/2 lb. sliced ham
    • 3 english muffins
    • Hollandaise sauce (see sauce category)


    Instructions


    1. Poach eggs
    2. In a frying pan heat ham
    3. Toast muffin halves and reheat Hollandaise sauce
    4. Place 1 muffin half on a plate, cover with a slice of ham
    5. Lift egg from water, drain well, place on ham slice
    6. Spoon about 3 tbs. of Hollandaise sauce over each egg
