Chinese Style Roasting
List of Ingredients
- Roasting pan (deep if possible)
- Wire rack (or horizontal rack is best)
- 1-2 inches of water
Instructions
- Place rack in roasting pan
- Add 1-2 inches of water
- Place meat on the rack
- Meat should not sit flat in a roasting dish stewing in its own juices
- Roasting starts with high heat (3/4 hour), which is later reduced to medium heat
- Baste during cooking with marinade (of your choice) or honey and warm water
