General Tao Chicken

List of Ingredients
- 1 lb. chicken breats, cut into small cubes
- 2 tbps. cornstarch
- 1 beaten egg
- 3 tbsp. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup vegetableoil
- SAUCE
- 2 tsp. sesame oil (2 tsp. toasted sesame seeds, works)
- 1 tbps. grated ginger
- 1/4 cup diagonally sliced shallots
- 1/4 cup water
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1 tbps. cornstarch
- 1 tbps. soya sauce
- 2 tbps. oyster sauce (optional)
- 2 tbps. ketchup
Instructions
- Coat chicken cubes with cornstarch
- Combine egg, flour, baking powder and salt in a bowl. Add chicken and stir to coat well
- Heat oil over high heat in a large non-stick skillet. Add chicken and cook for ten minutes, stirring often until golden brown
- Transfer chicken to a plate
- Add sesame oil, ginger and green onions to the skillet and cook over medium-high heat for three minutes
- Add water, vinegar and sugar. Simer until the sugar is completely dissolved
- In the meantime dissolve cornstarch in soya sauce, add soya sauce mixture, oyster sauce and ketchup to skillet
- Allow to simmer for two minutes or until sauce thickened
- Return chicken to the skillet and stir to reheat chicken
Final Comments
Garnish with sliced shallots
