Healthy Pork Stir Fry

- 1 lb. pork tender loin or medallions
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 tbsp. water
- 1 egg
- 1/4 cup corn starch
- 2 tbsp. vegetable oil
- 1 large green bell pepper chopped
- 1 red chile pepper chopped
- 1/2 cup crushed pinapple
- 1 large onion chopped
- 1 tomato chopped
- Sauce:
- 2 tbsp. white sugar
- 1/2 tsp. salt
- 1 1/2 tbsp. corn starch
- 3 tbsp. white vinegar
- 3 tbsp. ketchup
- 2 tbsp. plum sauce
- 4 tbsp. water
Instructions
- Arrange pork tenderloins or medallions on a cutting board, cover with plastic wrap. Using a mallet pound until 1/4" thick, cut into 1" square pieces.
- In a bowl combine salt, baking soda, egg and water. Place pork pieces in the bowl and turn to coat.
- Place the corn starch in a large plastic bag, add pork pieces and shake until all pieces are coated with the flour.
- Heat oil in a wok over medium high heat.Place pork pieces in oil and fry 5-10 minutes or until golden brown. Remove from oil and set aside.
- In the same wok over medium high heat, combine the bell pepper, red chile pepper, onion, tomato and pineapple and saute for 5 minutes.
- In a small bowl, combine white sugar, alt, corn starch, vinegar, ketchup, plum sauce and water. Mix well and add to the wok with the vegetables.
- reduce heat to low and let simmer for 5-10 minutes, allowing the sauce to thicken. Return pork to the wok, mix all together well and serve.
