    Healthy Pork Stir Fry

    List of Ingredients


    • 1 lb. pork tender loin or medallions
    • 1 tsp. salt
    • 1/2 tsp. baking soda
    • 1 tbsp. water
    • 1 egg
    • 1/4 cup corn starch
    • 2 tbsp. vegetable oil
    • 1 large green bell pepper chopped
    • 1 red chile pepper chopped
    • 1/2 cup crushed pinapple
    • 1 large onion chopped
    • 1 tomato chopped
    • Sauce:
    • 2 tbsp. white sugar
    • 1/2 tsp. salt
    • 1 1/2 tbsp. corn starch
    • 3 tbsp. white vinegar
    • 3 tbsp. ketchup
    • 2 tbsp. plum sauce
    • 4 tbsp. water


    Instructions


    1. Arrange pork tenderloins or medallions on a cutting board, cover with plastic wrap. Using a mallet pound until 1/4" thick, cut into 1" square pieces.

    2. In a bowl combine salt, baking soda, egg and water. Place pork pieces in the bowl and turn to coat.

    3. Place the corn starch in a large plastic bag, add pork pieces and shake until all pieces are coated with the flour.

    4. Heat oil in a wok over medium high heat.Place pork pieces in oil and fry 5-10 minutes or until golden brown. Remove from oil and set aside.

    5. In the same wok over medium high heat, combine the bell pepper, red chile pepper, onion, tomato and pineapple and saute for 5 minutes.

    6. In a small bowl, combine white sugar, alt, corn starch, vinegar, ketchup, plum sauce and water. Mix well and add to the wok with the vegetables.

    7. reduce heat to low and let simmer for 5-10 minutes, allowing the sauce to thicken. Return pork to the wok, mix all together well and serve.
