List of Ingredients
- 1 16 ounce package of Rotini pasta
- 4-5 quarts of water
- Dressing:
- 1 cup of tomato juice
- 1 1/2 tbs. olive oil
- 1 tbs. red wine viegar
- 1 1/2 tsp. chili powder
- 3/4 tsp. paprika
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- BALANCE OF INGREDIENTS:
- 1/2 cup grated Parmesan cheese
- 1/2 cup cooked frozen corn (thawed)
- 1/3 cup chopped cilantro
- 1/4 cup chopped shallots
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell peper
- 1 large chicken breast, cooked and diced
Instructions
- Bring 4-5 quarts of water to a boil
- Add the pasta,once the water begins to boil, cook for 8-11 minutes or until al dente
- Wisk all of the dressing ingredients together in a small bowl
- Cover and chill the dressing until you are ready to use it
- When pasta is done pour into a large bowl, add the dressing, then toss
- Add remaining ingedients to the pasta and toos until combined
- Cover and chill for several hours before serving
