Rosemary Roast of Pork

- 3 lb. roast of pork
- 6 sprigs of rosemary (1/2 tbs. dried)
- 4 tbs. olive oil
- 1 tbs. garlic cloves, finely chopped
- 4 potatoes
Instructions
- In a bowl, combine Rosemary and garlic
- Add oil and stir
- Cut slits in roast, stuff slits with mixture
- Rub roast all over with mixture
- Bake in a 350 degree oven for 1 hour
- Coat raw potatoes with balance of mixture and add to the roasting pan
- Return to oven and cook an additional 1 1\2 hours
