    Rosemary Roast of Pork

    List of Ingredients


    • 3 lb. roast of pork
    • 6 sprigs of rosemary (1/2 tbs. dried)
    • 4 tbs. olive oil
    • 1 tbs. garlic cloves, finely chopped
    • 4 potatoes


    Instructions


    1. In a bowl, combine Rosemary and garlic

    2. Add oil and stir

    3. Cut slits in roast, stuff slits with mixture

    4. Rub roast all over with mixture

    5. Bake in a 350 degree oven for 1 hour

    6. Coat raw potatoes with balance of mixture and add to the roasting pan

    7. Return to oven and cook an additional 1 1\2 hours
