Saucy Mushroom Pork Chops

- 2 tbs. vegetable oil
- 1 lb. butterfly pork chops
- 1/2 tsp. rosemary, dried
- 1/4 tsp. thyme
- 1 onion, chopped
- 3 cups mushrooms, sliced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. corn starch
- 1/2 cup chicken stock
Instructions
- In a skillet heat oil over high heat and brown pork chops
- Sprinkle with half the rosemary, thyme, salt and pepper, turn over and brown second side and set aside
- Reduce heat to medium and add a little more oil
- Cook onions, mushrooms and remaining rosemary, thyme, salt and pepper for about 5 minutes
- Stir cornstarch into chicken stock and add to the skillet
- Bring to a boil, cook stirring for 1 minute
- Add pork chops and cook for another 2-3 minutes
