Chicken Cacciatore

List of Ingredients
- 2 tbs. olive oil
- 2 tbs. butter
- 2 lb. chicken, cut up in pieces
- 1/2 lb. mushrooms, chopped
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, pressed
- 2 tbs. parsley, chopped
- 1/2 cup water
- 1/2 cup chicken broth
- 1 can (6 oz.) tomatoe paste
- 1/4 tsp. majoram, oregano and thyme leaves
- 2 tsp. salt
- 1/2 tsp. pepper
Instructions
- Heat oil and butter in a skillet
- Add chicken and cook until brown on all sides
- Remove chicken and set aside
- Pour off fat and disgard all but 3 tbs. of drippings
- Add mushrooms, onion, bell peppers and garlic
- Reduce heat to meduim and cook stirring until onions are soft
- Stir in parsley, water, wine, tomatoe paste, majoram, oregano, thyme, salt and pepper
- Return chicken to pan
- Bring to a boil, cover and reduce heat, simmer until chicken is tender (40-45 minutes)
