Italian Roast Chicken
List of Ingredients
- 1 5-6 lb. chicken
- 2 springs of Rosemary (2 tbs. dired also works)
- 6 sage leaves (1 tsp. dried also works)
- 1/2 cup olive oil
- 1 lemon
- 2 carrots, chopped
- 1 large onion, chopped
- 1 red pepper, chopped
- 4 medium potatoes, chopped
- 1 tsp. salt
- 1 tsp. black pepper
Instructions
- Finely chop Rosemary, sage and garlic
- Put in a bowl and add 1/2 cup of olive oil and mix well
- Season chicken in and out with salt and pepper
- Put some of the mixture in the cavety with 1/2 of the lemon
- Bast outside of the chicken with mixture
- Sqeeze balance of lemon over mixture
- Add the balance of the mixture to the pan
- Cook in a 450 degree oven for 1 hour
- Take out chicken and add vegetables
- Put back in the oven and cook an additional hour
