Fagioli (Italian Pasta & Bean Soup)

- 1 Italian sausage, casting removed
- 2 tsp. vegetable oil
- 2 tsp. garlic, crushed
- 1\2 cuponions, chopped
- 1\3 cup carrots, chopped
- 1\3 cup celery, chopped
- 1 cup tomatoes, diced
- 4 cups chicken stock
- 1 tsp. basil, dried
- 1\2 tsp. oregano, dried
- 1\2 tsp. parsley, dried
- 2 cups red kidney beans, drained
- 1\2 cup small shell pasta
- 3 tbs. parmesan cheese, grated
Instructions
- In a large sauce pan heat oil, saute garlic, onion, sausage, carrots and celery for 5 minutes
- Add tomatoes, stock, basil, oregano, parsley and 1 cup of beans
- Mash remaining beans and add to the soup
- Simmer 15 minutes, stirring occasionally
- Add pasta and simmer for another 5-8 minutes, until pasta is done
- Add cheese and serve
Final Comments
You can prepare early in the day but do not add pasta until 10 minutes before serving
