CHICKEN WITH PECAN STUFFING

List of Ingredients
1/2 pound Pecans
1/2 cup melted butter or margarine
5 cups cubed bread
2 well beaten eggs
1 1/2 cup chopped celery
1 1/2 teaspoon salt
4 teaspoon poultry seasoning
1 1/2 cup chopped onion
Recipe
Sautee the celery and onions in the butter. Add the chopped pecans and poultry seasoning. Toss with the bread cubes and add the egg.Yields enough to stuff a 20 lb turkey
Cut the chicken in half and remove the bones. Fill the cavity with the stuffing and wrap up with a tinfoil band. Season and bake at 350 – 375 degrees for 25 minutes or until fully cooked. Remove the band and brown. Deglaze the pan with a little water or white wine and thicken the juice that the chicken has cooked in with a bit of cornstarch.
