List of Ingredients
1 lb grated Chocolate
1 cup 35% cream
1/4 lb salted butter
2 oz liqueur
Recipe
Heat the cream in a heavy bottom sauce pan until it is hot but not boiling. Cube and add the 1/4 lb of butter and the grated chocolate. This mixture is called ganache. Stir until all is dissolved and cool slightly. Whisk every 15 minutes to incorporate air into the mixture. When the ganache begins to harden add the liqueur and whisk until light and airy. The ganache is now ready to be formed into truffles or used as a filling for a cake.
When making truffles, form into balls about the size of a large marble and roll in chopped nuts, grated white chocolate, skor pieces etc, Don't forget to buy truffle cups. These are usually available at most cake stores.
