    Recipe Introduction

    This recipe is fiery hot. I use the E.D. Smith Jerk seasoning because of the flavour and the integrity of the ingredients. All of the spices go well together. The chipotle peppers are just to give this a smoky taste. I use the 2 tortillas to provide a little more size and stability when rolling the sandwich

    List of Ingredients

    2 oz chicken meat cut in strips and marinated in about ¼ cup of jerk seasoning (E.D. Smith recommended)
    1 tbsp Spanish onions
    1/2 tsp chopped chipotle peppers
    1 tbsp green or red sweet peppers
    2 tbsp Spanish onions
    2 tbsp mushrooms sliced
    ½ cup basmati rice
    Salt and pepper to taste

    2 10 inch flour tortilla’s slightly overlapping

    Recipe

    Marinate the chicken in the jerk spice about 2 hours and fry in a little oil until done. Add the mushrooms onions and peppers and fry until cooked. Add the rice and the chipotle peppers. Adjust the salt and pepper.
    Place the mixture in the tortillas and roll up like a burrito. Cut in half and serve on a plate with a salad or French fried potatoes with fresh cucumber wedges.
