A quick and clever way to present potatoes. It looks like you put an incredible amount of time into them
List of Ingredients
What you will need
An apple corer
Mini red skin or white potatoes
A small knife
A pot of salted water
Recipe
Cut an end off of the potato about the diameter of a quarter and insert the apple corer into the potato about 1 ½ inches. Using your paring knife cut around the tube of the apple corer to remove the excess potato. Remove the tube and voila. A perfect mushroom. Repeat until you have about 5-6 per person and put into rapidly boiling water. Return to a boil and cook gently until the potatoes are tender but not mushy. Season with salt and pepper and brush with butter. For a really rustic look dip the stalks of the potatoes in parsley or herbs
