    ROAST DUCK A L'ORANGE

    ORANGE SAUCE
    1 1/2 cup Orange juice
    5 tbsp chicken or duck stock
    1 oz triple sec
    1 tablespoon cornstarch mixed with 2 tablespoons water,

    1 DUCK

    Recipe

    Remove the zest from one orange; juice the orange and set aside. Simmer the zest in stock for 2 minutes. Thicken with the cornstarch

    Cut the duck in half and remove all of the bones, except the leg tip and the wing tip. Remove the excess fat.Rub the carcass with salt and pepper and stuff a clove of garlic and onion slices insideFold up and bake at 350 degrees about 45 minutes or until the skin is a golden brown and the meat is cooked. Well done to rare are the preferred ways to cook duck since it is considered a red meat.
