    SPINACH SALAD WITH CRANBERRY DRESSING

    List of Ingredients

    THE DRESSING
    1 pkg of dried cranberries
    4 oz white balsamic vinegar
    ½ cup sugar
    2 tsp zest of lemon, lime, and orange
    2 cups cranberry juice
    1 tsp fresh mint

    THE SALAD
    ½ lb fresh baby spinach ( cleaned and ready to go)
    4 tbsp toasted almonds with a sprinkle of sugar
    Red onion
    Pomegranate seeds
    ½ cup soya cheese

    Recipe

    Blend the cranberries in the balsamic vinegar with the sugar until they form a paste. Slowly add the cranberry juice and the fresh mint. Stir in the zest

    Toss the spinach in the vinaigrette. Plate and top with the onions pomegranate seeds and soya cheese. Serve immediately.

    Note: the dressing will keep up to a week in the fridge in a tightly sealed container.
