    List of Ingredients

    3 1/2 lb hard flour
    2 oz sugar
    1 1/2 oz salt
    3 oz fresh yeast or 3 tbsp dry yeast
    2 oz shortening
    4 oz bran
    4 1/2 cups warm water


    Recipe

    Mix the dough at speed 1 using the dough hook for 5-10 minutes Dough may seem a little wet, allow to rest for 10-15 minutes. Scale the dough at 1 lb 9 oz, round up and allow to rest for 10-15 minutes Form the loaves and proof. If using bread pans grease and allow to proof until dough crests the pan
