    LEMON SPONGE PIE

    My grandmother was probably the greatest influence on my career choice. Her pies and cakes were second to none

    List of Ingredients

    2 eggs (separated)
    1 1/2 tbsp butter
    1 cup granulated sugar
    2 teaspoons finely shredded lemon peel
    1/4 cup lemon juice 1( 1 lemon equal to 4 tbsp lemon juice or ¼ cup)
    2 teaspoons all-purpose flour (heaped)
    1/8 teaspoon salt
    3/4 cup cold milk

    Recipe

    Prebaked pie crust
    Beat egg whites until stiff peaks form. Set aside. In a mixing bowl, combine flour, lemon zest, lemon juice, milk, butter and egg yolks. Gently fold egg whites into mixture. Pour mixture into pastry-lined pie pan. Bake lemon sponge pie at 350° for 40 minutes, or until done.
