- 2 CUPS GRAHAM CRACKERS
- 1/4 CUP MELTED BUTTER
- 4 CUPS ICING SUGAR
- 1/2 CUP BUTTER
- 2 SMALL EGGS
- 1- 20 OZ CAN PINEAPPLE
- 1/2 PT CREAM
- 3 TBSP ICING SUGAR
- 1 TSP VANILLA
Instructions
- COMBINE THE GRAHAM CRACKER CRUMBS AND THE 1/4 CUP MELTED BUTTER
- PRESS DOWN 1/2 OF THE MIXTURE IN A 9X9 PAN
- MIX TOGETHER THE 4 CUPS ICING SUGAR, 1/2 CUP SOFT BUTTER UNTIL CREAMY
- BEAT IN 2 SMALL EGGS
- SPREAD OVER THE CRUMBS
- DRAIN THE PINEAPPLE AND SPREAD OVER THE BATTER
- WHIP UNTIL STIFF THE 1/2 PINT OF CREAM.
- ADD THE 3 TBSP ICING SUGAR AND THE VANILLA
- SPREAD OVER THE PINEAPPLE
- TOP WITH THE REMAINING GRAHAM CRUMB MIXTURE AND PLASTIC WRAP
- CHILL OVERNIGHT
