    • 4 LB PEELED PUMPKIN
    • 5 CUPS WHITE SUGAR
    • 5 CUPS WHITE VINEGAR
    • 4 CINNAMON STICKS
    • 15 CLOVES
    • A FEW HOT PEPPERS


    Instructions


    1. PLACE THE PUMPKIN IN A DEEP BOWL
    2. IN A LARGE SAUCE PAN MIX TOGETHER THE SUGAR, VINEGAR, CINNAMON STICKS AND CLOVES
    3. BOIL 5 MINUTES AND POUR OVER THE PUMPKIN
    4. COVER AND SET ASIDE OVERNIGHT
    5. THE NEXT DAY, STRAIN THE LIQUID INTO A SAUCE PAN AND BOIL FOR 5 MINUTES.
    6. REMOVE THE CINNAMON AND CLOVES, FOR DECORATION
    7. PLACE THE PUMPKIN BACK IN THE LIQUID AND RETURN TO BOIL. S
    8. COOK UNTIL THE PUMPKIN IS TRANSPARENT BUT STILL CRISP
      ( ABOUT 5 MINUTES)
    9. COOL AND TRANSFER TO STERILE JARS
    10. REFRIGERATE
