- 4 LB PEELED PUMPKIN
- 5 CUPS WHITE SUGAR
- 5 CUPS WHITE VINEGAR
- 4 CINNAMON STICKS
- 15 CLOVES
- A FEW HOT PEPPERS
Instructions
- PLACE THE PUMPKIN IN A DEEP BOWL
- IN A LARGE SAUCE PAN MIX TOGETHER THE SUGAR, VINEGAR, CINNAMON STICKS AND CLOVES
- BOIL 5 MINUTES AND POUR OVER THE PUMPKIN
- COVER AND SET ASIDE OVERNIGHT
- THE NEXT DAY, STRAIN THE LIQUID INTO A SAUCE PAN AND BOIL FOR 5 MINUTES.
- REMOVE THE CINNAMON AND CLOVES, FOR DECORATION
- PLACE THE PUMPKIN BACK IN THE LIQUID AND RETURN TO BOIL. S
- COOK UNTIL THE PUMPKIN IS TRANSPARENT BUT STILL CRISP

- COOL AND TRANSFER TO STERILE JARS
- REFRIGERATE
