    Fish/Seafood: Crab Stuffed Snow Peas

    List of Ingredients

    12 ounces fresh crab meat, well drained
    2 hard boiled eggs, finely chopped
    4 tablespoons mayonnaise
    3 dashes hot sauce (optional)
    1 teaspoon minced capers
    3 tablespoons finely chopped celery
    1/2 pound fresh snow peas

    Recipe

    For filling, combine crab, eggs, mayo, hot sauce, capers and celery. Wash snow peas and split on top side to form a boat. Blanch for 10 seconds in boiling water then submerge in cold water. Drain and cool. Stuff each with 1 heaping teaspoon crab filling. Chill until ready to serve.
