    Cheese: Blue Cheese Dip with Garlic & Bacon

    List of Ingredients

    7 slices bacon, diced
    2 cloves garlic, minced
    8 ounces softened cream cheese
    1/4 cup half and half
    4 ounces crumbled blue cheese
    2 tablespoons chopped fresh chives
    3 tablespoons chopped smoked almonds (1 oz)
    crackers or raw veggies

    Recipe

    Preheat oven to 350ºF. Cook bacon in a heavy, large skillet over medium-high heat until almost crisp; add garlic and cook until bacon is crisp. Drain the bacon on a paper towel. Using an electric mixer, beat cream cheese until smooth; add half-and-half and beat until well-combined. Stir in bacon and garlic, blue cheese and chives. Transfer to a 2-cup baking dish; cover with foil. Bake 15 to 20 minutes. Sprinkle with chopped almonds. Serve with crackers or vegetables. Note: The dip can be prepared a day ahead. Keep refrigerated. Bring to room temperature before baking. Makes 1 cup.
