    Hummus: Hummus Dip with White Beans (lower fat)

    List of Ingredients

    2 cans (15 ounces ea.) white great northern beans well rinsed and drained
    6 cloves garlic, peeled and sliced
    1/3 cup fresh lemon juice
    1 dash cayenne pepper
    salt and white pepper to taste
    1/8 teaspoon paprika
    1/3 cup olive or vegetable oil
    2 tablespoons or more vegetable broth

    Recipe

    This recipe is lower in fat than classic Hummus mixtures. Place all but oil and vegetable broth in a food processor container and blend until pureed. Slowly add the oil and continue blending, until dip is very smooth. Add a little vegetable broth if needed to help make the mixture smooth. Place dip in an attractive bowl and surround with pita triangles. Serves 8. To make traditional hummus, substitute 2 cans (15 ounces each), rinsed and drained garbanzo beans for the white beans.
