    Hummus: Split Pea Hummus

    List of Ingredients




    1 c Dried green split peas
    1/2 c Tahini
    1 tb Olive oil
    1/3 c Lemon juice
    2 Garlic cloves minced
    1 1/2 ts Dried mint
    4 tb water

    Recipe



    Cook the split peas in 3 cups of water for 45 to 60 minutes on the stovetop, or 8 to 12 minutes in a pressure cooker. Place all ingredietns in a food processor and blend until smooth and creamy, adding enough water to achieve desired consistency. Yields: 2 1/2 cups. Serve at room temperature.
