    Hummus: Sweet Red Pepper Hummus

    List of Ingredients

    1 can chickpeas, rinsed and drained
    1 4 ounces jar roasted red peppers, drained
    3 tablespoons fresh lemon juice
    1 1/2 tablespoons tahini
    1 clove garlic, peeled
    1/2 teaspoon ground cumin
    1/2 teaspoon cayenne pepper
    1/4 teaspoon salt
    1 tablespoon chopped parsley

    Recipe

    In a food processor, combine the chickpeas, peppers, lemon juice, tahini, garlic, cumin, cayenne and salt. Process, using long pulses, to a fairly smooth and slightly fluffy puree, scraping down the sides of the bowl once or twice. Transfer to a serving bowl and refrigerate at least 1 hour. Hummus can be made up to 3 days ahead and refrigerated. Sprinkle hummus with chopped parsley and serve surrounded by veggies or pita crisps for dipping. Makes 1 1/2 cups
