    "These are a delicious appetizer. They are also a lovely way to garnish a meat or poultry platter for a special dinner."

    List of Ingredients




    12 medium mushrooms
    Olive oil, to taste
    1/2 cup seasoned breadcrumbs
    1/4 cup chopped black olives
    6 tablespoons Italian tomato sauce
    6 tablespoons freshly grated Parmesan cheese, divided
    1/2-cup sour cream, optional

    Recipe



    Twist each mushroom stem gently to remove it completely from the cap. Chop the stems finely and set aside. Using a paper towel, wipe each mushroom cap with olive oil to coat the outside. In a medium bowl, combine the breadcrumbs, olives, tomato sauce, 4 tablespoons Parmesan cheese and chopped mushroom stems. Using a small spoon, stuff each mushroom cap, dividing the mixture evenly among the mushrooms. Place mushrooms in a shallow pan on the 4" rack. Sprinkle the mushrooms with remaining grated Parmesan. InfraCook on HI for 10 minutes. Transfer to a platter. If desired, serve with toothpicks for spearing and a bowl of sour cream to dip them in.
    Yield: 12 mushrooms
