    Baked Potatoes with Two Toppings

    "Baked potatoes are so versatile. Add a hearty topping like seafood in sauce or bacon and cheese, and they become a whole meal."

    List of Ingredients




    4 medium baking potatoes

    Recipe



    Scrub potatoes and pierce each several times with a fork. Place directly on the 1" rack. InfraCook on HI for 45 minutes, or until tender. Remove potatoes from the oven. With a knife cut an X in the top of each. With a fork, slightly mash the insides. Add the topping of your choice.
    Yield: 4 servings

    Crab Topping:
    1-cup chicken broth
    1/4-cup flour
    2 tablespoons butter, softened
    1 package (3 ounces) cream cheese, cut into 1-inch cubes
    8 ounces process American cheese, cut into 1-inch cubes
    4 drops hot pepper sauce
    Pinch onion powder
    1 cup chopped imitation crab or other seafood
    In a blender or processor, combine chicken broth, flour, butter, cream cheese, Cheddar cheese, and hot pepper sauce and onion powder. Process smooth. Pour into a saucepan; cook over medium heat, stirring, until thickened. Reduce heat to low and add the crab. Spoon an equal portion of filling into each baked potato.


    Bacon, Onion and Cheese Topping:
    1 small red onion, chopped
    1/4 cup Italian dressing
    1/4-cup butter, softened
    10 slices bacon, cooked crisp and crumbled
    1 cup grated sharp Cheddar or Monterey jack cheese
    In a small bowl mix the onion and Italian dressing; set aside. Top each potato with butter and then with onion-dressing mixture. Sprinkle evenly with crumbled bacon, then cheese. Return to the oven and InfraCook on HI for 2 to 4 minutes, until bubbly.
