    Recipe Introduction


    "Moist, tender fish tucked under a crisp topping of garlic-butter crumbs. Use catfish, cod, flounder; sole or any white fish fillets-whatever looks good at the market."

    List of Ingredients




    2 slices white bread, crusts removed
    2 tablespoons butter or margarine
    1 clove garlic, peeled
    4 small cod fillets, about 6 ounces each
    2 tablespoons lemon juice
    3/4-teaspoon salt
    Parsley springs, as a garnish
    Lemon wedges, as a garnish

    Recipe



    In the blender or processor, whirl bread to make fine crumbs. Set aside. In a medium skillet over medium heat, melt the butter. Press the garlic into the butter and stir it around for about a minute. Let it turn light gold but not brown. Remove from heat and stir in the breadcrumbs. Place the fish fillets in a pan large enough to hold them in a single layer. Sprinkle with lemon juice and salt. Press the crumb mixture on top of the fillers. Place pan on the 4" rack and InfraCook for 8 to 10 minutes or until the fish is opaque and starts to flake when you test it with a fork (be careful not to overcook). Garnish with parsley sprigs and lemon wedges.
    Yield: 4 servings
