    "Cranberries and cinnamon mix deliciously with rich, sweet pork meat. This is a wonderful autumn or winter party dish, teamed with sweet potatoes or acorn squash and a green salad."

    List of Ingredients




    1 boneless pork loin roast, about 2 pounds
    Seasoned salt, to taste
    1-teaspoon cornstarch
    1/8-teaspoon cinnamon
    Salt, to taste
    1/2 teaspoon grated orange peel
    1 tablespoon orange juice
    1 tablespoon dry Madeira
    1 cup canned whole berry cranberry sauce

    Pat the meat dry with paper towels and sprinkle on all sides with seasoned salt. Place it, fat-side-down, on the 1" rack and InfraCook on Power Level 5 for 20 minutes. Turn the roast fat side up and InfraCook for 30 minutes more or until the meat is barely pink inside (155¡ on an instant read thermometer).

    While the roast cooks, in a small saucepan combine cornstarch, cinnamon, salt, grated orange peel, orange juice, Madeira, and cranberry sauce. Bring to a boil over medium heat and cook and stir for 1 to 2 minutes or until thickened. When the roast is done, spread it with about 1/4 cup of the sauce. InfraCook for another 3 to 4 minutes or until nicely glazed (watch carefully as the sugar in the sauce burns easily). Remove from the oven and let the roast stand for 10 minutes before slicing. Serve with pan juices, if desired, and the remaining cranberry sauce.
    Yield: 8 servings
