    "This savory giant pancake is filled with cheese, ham and broccoli. Top it with a dollop of mushroom sauce and you have an unusual lunch dish that's dead easy."

    List of Ingredients




    2 large eggs
    1 1/4 cups milk
    2 tablespoons vegetable oil
    2 cups pancake mix (regular or complete)
    1 cup chopped cooked ham
    1 cup frozen, chopped broccoli, thawed and well drained
    2 cups shredded sharp Cheddar cheese, divided
    Cooking spray, to coat pan
    1/8-teaspoon thyme Mushroom Sauce
    1 can (15 3/4 ounces) cream of mushroom soup
    1/3-cup milk

    Recipe



    In a medium bowl combine the eggs, milk and oil. Add pancake mix and beat until blended. Stir in ham, broccoli and 1 cup of the cheese. Coat the liner tray with nonstick cooking spray. Pour the pancake directly into liner tray. InfraCook on HI for 18 minutes or until pancake is freckled with brown spots and is done in the center (lift out a little piece to check). Top with remaining 2 cups of cheese and InfraCook for 1 minute, or until cheese just melts. While the torte bakes, combine soup and milk in a small saucepan. Stir to blend and heat until hot. (If you like, substitute cream of celery or Cheddar cheese soup for the mushroom soup) Serve pancake cut in wedges and top each servings with sauce.
    Yield: 6 to 8 servings
