    Recipe Introduction


    "Lemon, oregano and garlic are the flavors of the Mediterranean. Serve some black Kalamata olives with this dish and a salad of crisp greens."

    List of Ingredients




    1 whole chicken, about
    3 pounds, cut up
    Oregano, to taste
    Garlic powder, to taste
    2 tablespoons melted butter
    Salt and pepper, to taste
    Juice from 2 fresh lemons (6 tablespoons)

    Recipe



    Sprinkle the chicken pieces generously with oregano and garlic powder. Put the melted butter in a pan large enough to hold the pieces in one layer. Roll the chicken in the butter to coat all sides, then place skin-side-down in the pan. Sprinkle with salt and pepper to taste Plan pan on the 4" rack and InfraCook on HI until golden, about 20 minutes. Turn skin side up. Sprinkle with salt and pepper. InfraCook for 20 minutes more, or until nicely browned and the juice runs clear when poked with a fork. Squeeze lemon juice over the chicken. Cover the dish with foil. Put on the oven dome and let the chicken rest (oven off) for 15 minutes to absorb the lemon flavor.
    Yield: 4 servings
