    "A crunchy coating is the perfect contrast to the moist, sweet-fleshed fish. What could taste better? Serve with tartar sauce or guacamole."

    List of Ingredients




    1 1/2 pounds lean fish fillets, such as catfish
    3/4 cup dry breadcrumbs
    3/4-teaspoon paprika
    1 teaspoon chopped fresh dill weed or 1/4 teaspoon dried
    1/2-teaspoon salt
    1/8-teaspoon pepper
    1/3-cup milk
    1/4 cup butter or margarine, melted

    Cut each fillet into several pieces. On a piece of wax paper mix crumbs, paprika, dill, salt and pepper. Pour the milk into a plate. Dip fish in the milk, then into the crumbs to coat both sides. Place fish in a pan large enough to hold them in one layer. Drizzle melted butter over all. Place on the 4" rack and InfraCook on HI for 8 to 10 minutes or until fish just starts to flake when tested with a fork (be careful not to overcook).
    Yield: 4 servings
