    "These crisp tortillas are bursting with melted cheese, nippy salsa and smooth, savory beans."

    List of Ingredients




    4 flour tortillas, 8" in diameter
    1-cup refried beans
    1-cup ricotta cheese
    1 teaspoon seasoned salt
    1/3 cup grated Parmesan cheese
    1 1/4 cups chopped green onion, including green tops
    1 tablespoon chopped fresh cilantro leaves
    Melted butter
    1/4-cup salsa
    1/4 cup grated sharp Cheddar or Monterey Jack cheese
    Salsa, as a garnish
    Sour cream, as a garnish

    Recipe



    Spread about 1/4 cup of the beans on half of each tortilla, covering to within 1/2" of the edge. In a small bowl mix the ricotta cheese, seasoned salt, Parmesan cheese, green onions and cilantro. Top the beans on each tortilla with 1/4 cup of ricotta mixture, and 1 tablespoon each of salsa and cheese. Fold tortillas in half over the filling. Place on the 4" rack. Brush tops with a little melted butter. InfraCook on HI for 10 minutes or until tortillas begin to color slightly and the filling is hot and gooey. Serve with bowls of salsa and sour cream.
    Yield: 4 servings
