    1/2 pound mushrooms, cleaned
    2 small onions
    1 1/4 pounds lean beef sirloin
    3 tablespoons unsalted butter
    salt and fresh ground black pepper
    1 medium tomato
    2 tablespoons flour
    1/2 cup beef stock or broth
    1 teaspoon Worcestershire sauce
    1/4 cup sour cream
    1/2 cup water

    Cut mushrooms into thick slices. Slice the onions. Cut beef into strips, about 1/2 inch thick by 2 1/2 inches long. Peel and seed the tomato and dice. Melt 2 tablespoons butter in the pressure cooker. Add mushrooms and onions and cook over medium-high heat until tender. Set aside. Melt the remaining butter in the pressure cooker. Add meat and brown well on all sides. Season with salt and pepper to taste, then sprinkle the flour over the top. Add the stock or broth and Worcestershire sauce. Close pressure cooker and bring up to full pressure. Reduce heat to stabilize pressure and cook for 10 minutes. Release pressure and add mushrooms, onions, tomato and sour cream. Stir gently and heat, if necessary, but do not let it come to a boil. Serve hot.
