    3/4 cup sugar
    1 3/4 cups water
    2 cups milk
    3 eggs
    1/2 teaspoon vanilla

    To make caramel : In a small heavy saucepan, combine 1/2 cup sugar and 1/4 cup water. Place pan on low heat and stir until sugar is completely dissolved. After all sugar is dissolved, increase heat to medium and constantly, until syrup turns a deeper golden color. Remove pan from heat. Wearing oven mitts, pour caramel into a 1 quart mold and tip and turn the mold to evenly coat bottom and sides.

    Scald milk and allow to slightly cool. In a bowl, beat eggs lightly to mix yolks and whites. Add vanilla and remaining sugar (1/4 cup). Stir. Gradually add milk, stirring constantly. Pour this mixture into caramel coated mold. Cover mold tightly with aluminum foil securely tied. Pour remaining water (1 1/2 cups) into cooker. Put trivet in cooker. Place mold on trivet. Close cooker. Bring to full pressure on high heat. reduce heat and cook for 10 minutes. Remove cooker from heat. Allow to cool naturally. Open cooker. Take out & uncover mold. (Custard will continue to set as it cools). Allow to cool to room temperature. Refrigerate. Place a serving dish (large enough to accommodate caramel sauce) on top of mold and invert. Shake gently to release. Remove mold. Serve custard chilled.
