    Tandori Marinade with Yogurt for Chicken

    List of Ingredients

    1 tablespoon chopped garlic
    1 tablespoon chopped fresh ginger
    4 tablespoons peanut or vegetable oil
    1/2 teaspoon garam masala
    1/2 teaspoon ground turmeric
    1/8 teaspoon cayenne
    1/2 cup yogurt
    1/2 teaspoon salt

    Recipe

    Combine all ingredients and taste for seasoning, keeping in mind that the cayenne flavor will get stronger after an hour or so. Makes about 1/2 cup, enough for 1 chicken, 3-4 pounds chicken parts, or 3-4 pounds boneless lamb. Note: for garam masala, a typical mixture is 2 parts each black pepper, cardamom seeds, coriander seeds and cumin, and 1 part each cinnamon and cloves. Freshly ground and tightly sealed in a jar, it will keep for a few months, but it is best made frequently.
