    Chicken: Chicken Teriyaki 2

    List of Ingredients

    1 1/2 tablespoons soy sauce
    1 tablespoon honey
    1 teaspoon ground ginger
    1/2 teaspoon dark sesame oil
    1 clove garlic, crushed
    1 pound chicken breast, cut 2" pieces
    2/3 cup rice
    1/4 teaspoon salt
    1 green bell pepper, cut 1" squares
    1 pint cherry tomatoes
    2 scallions, fine chopped

    Recipe

    In a shallow bowl combine, soy sauce, honey, ginger, oil, and garlic. Stir to blend. Add the chicken, toss to coat completely, and let stand while you start cooking the rice. In a medium saucepan, combine the rice, 1 1/3 cups water, and the salt, Bring to a boil over high heat, reduce the heat and simmer, covered, until the rice is tender and all the water is absorbed about 17 minutes. Prepare grill, spray with nonstick cooking spray. Alternating ingredients, thread pieces of chicken, bell peppers, and the tomatoes onto 8 skewers. Grill kebabs for about 8 minutes, turning once, or until the chicken is cooked through. Stir the scallions into the rice. Spoon rice onto 4 plates, place kebabs on top and serve
