    Lamb: Lamb Kebabs

    List of Ingredients

    1 pound lamb, cut 1-2" cubes, fat removed
    4 cloves minced garlic
    2 shallots, small dice (or 1 sm onion)
    2 tablespoons fresh mint leaves, fine chop
    juice of 1 lemon
    1/4 cup white wine
    salt and pepper to taste

    Recipe

    Combine all ingredients in a small bowl or heavy duty freezer bags. Let marinate at least one hour or up to overnight. Once the lamb has marinated place on to skewers. Do not pack the lamb cubes on too tightly as the outside will cook too quickly while the inside will be under done. Cook on the grill with a a medium flame or when the coals have burned down. If cooking the Kebabs in the broiler be sure to place them further down, away from the burner, so they get cooked through. Cook them for approximately 15 to 20 minutes, turning every five minutes.

    Serving Suggestions (from original poster): I like to make an entire Mediterranean meal around these Kebabs. I serve them with couscous, cucumber and yogurt salad, pita and hummus. They are also very good with a green salad and rice pilaf.
