    Mamie's Everyday Biscuits

    Source of Recipe

Sister Schubert's Secret Bread Recipes cookbook

    List of Ingredients

    2 cups flour
    2 teaspoons baking powder
    3/4 teaspoon salt
    3/4 cup milk
    1/4 cup oil
    1/2 cup flour, divided
    2 teaspoons oil

    Recipe

Preheat oven to 400ºF. Combine first 3 ingredients in large bowl. Combine milk and 1/4 c. oil; add to flour mixture, stirring with a fork just until dry ingredients are moistened. Sprinkle 1/4 cup flour evenly over work surface; turn dough out onto floured surface. Sprinkle dough with remaining 1/4 cup flour. Roll or pat dough to 1/4" thickness; fold dough in half. Roll or pat entire surface one time only to set dough for cutting (dough should be slightly less than 1/2" thick.)

Cut biscuits with a floured 1 /2 inch biscuit cutter. Pour 2 tbl. oil into one end of a 15x10 inch jellyroll pan, tilting pan slightly to keep oil pooled. Dredge each biscuit generously on both sides in pooled oil; arrange in pan, leaving about 1 inch of space between biscuits. Wipe out any leftover oil with paper towel. Bake for 15-20 minutes or until golden. Makes 1 1/2 dozen.
