    Apple: Apple Crunch Muffins

    List of Ingredients

    1 1/2 cups flour
    1/2 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 cup butter
    1 egg
    1/2 cup milk
    1 cup tart apples, unpeeled and shredded

    Nut Crunch Topping:
    1/4 cup brown sugar
    1/4 cup pecans, chopped
    1/2 teaspoon cinnamon

    Recipe

    Preheat oven to 375ºF. In large bowl, mix together the flour, sugar, baking powder, salt and cinnamon. Cut in butter,un til flour mixture is in the "fine crumb" stage. In separate bowl, combine the egg, milk and apples. Add to the flour-butter mix, stirring just to moisten. To make topping, combine brown sugar, pecans and cinnamon. Spoon into muffin cups, filling 2/3 full. Sprinkle tops with nut crunch topping. Bake for 20-25 minutes or until golden brown. Serve warm. Makes 12 muffins.
