    Carrot: Carrot Wheat Germ Muffins

    List of Ingredients

    1 1/2 cups flour
    1/4 cup wheat germ
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon ground ginger
    1/2 cup coarse chopped walnuts
    1/4 cup oil
    2 eggs
    1/2 cup light brown sugar
    1/2 cup milk
    1 cup fine grated carrots (4 medium size carrots

    Recipe

    Preheat oven to 400ºF. In large bowl, stir together flour, wheat germ, baking powder, salt, ginger and walnuts; set aside. In medium bowl, whisk together eggs, oil and sugar. Still whisking, add the milk and carrots. Add the liquid mixture to the dry ingredients and stir until just combined. Do not overmix. Fill 12 lightly greased muffin cups 3/4 full. Bake until golden brown, about 20 minutes. Serve hot with butter or honey. Freezes well.
