    Cranberry: Cranberry Poppy Seed Muffins

    List of Ingredients

    1 3/4 cups original bisquick
    1/2 cup sugar
    1/4 cup plain yogurt
    1/2 cup milk
    1 tablespoon poppy seed
    1 teaspoon grated lemon peel
    1 egg
    1/2 cup fresh or frozen (thawed) cranberries

    Recipe

    Heat oven to 400ºF. Line 12 medium muffin cups, 2 1/2x1 1/4 inches, with paper baking cups, or grease bottoms only of muffin cups. Stir all ingredients except cranberries just until moistened. Stir in cranberries. Fill muffin cups about 3/4 full. Bake 18 to 20 minutes or until golden brown. Let stand 5 minutes; remove from pan. 12 muffins.

    SPECIAL TOUCH: Drizzle these warm muffins with a glaze made by mixing 1/2 cup powdered sugar and 1 to 2 tablespoons of milk or whipping (heavy) cream until smooth and thin enough to drizzle.
