    2/3 cup dates, chopped
    1/2 cup boiling water
    1/4 cup butter or margarine
    1/2 cup sugar
    1 egg, room temp
    1 cup flour
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup pecans, chopped

    Recipe



    Preheat oven to 350ºF. Line muffin pan with paper liners or spray with nonstick cooking spray. In small bowl, combine the dates with the boiling water; cool to room temp. In mixing bowl, cream the butter with sugar and egg until light and fluffy. In separate bowl, stir together the flour, baking soda, and salt; add to the creamed butter mixture alternately with the date mixture to just combine. Stir in chopped nuts. Fill muffin pans 1/2 full. Bake for 14-18 minutes. Sprinkle cooled muffins with powdered sugar if desired. Makes 12 muffins.
