    Pumpkin: Dr. Weil's Pumpkin Muffins

    List of Ingredients

    2 cups pumpkin puree
    1 cup maple syrup
    3 tablespoons light olive oil
    2 cups whole wheat pastry flour
    1 teaspoon baking soda
    1/4 teaspoon salt (optional)
    1/4 teaspoon ground cloves
    1/4 teaspoon powdered ginger
    1 teaspoon cinnamon
    3/4 cup chopped walnuts

    Recipe

    Preheat oven to 350ºF. Mix together the pumpkin puree, maple syrup and olive oil. Sift together the flour, baking soda, salt and spices, and add the walnuts. Blend the dry ingredients into the wet ones until just mixed. Divide the batter equally in the 12 cups of a nonstick muffin pan. Bake for 45 minutes. Remove from oven. Let cool slightly and remove muffins from pan. Serves 12.
