    Savory: French Dijon Ham Muffins

    List of Ingredients

    1 2/3 c Flour
    1/3 c Cornmeal
    1/4 c Sugar
    2 ts Dry mustard
    2 ts Baking powder
    2/3 ts Salt
    1/2 t Baking soda
    1/8 t Cloves
    1 c Chopped cooked smoked ham
    2 Egg, room temp.
    1 c Buttermilk
    1/3 c Oil
    3 tb Dijon mustard

    Recipe

    Mix together the first 8 dry ingrdeints. Stir in the ham. In another bowl combine wet ingredients. Pour into well in center of dry ingredients and mix quickly. Spoon into muffin cups 3/4 full. Bake in a 375ºF oven until done and browned. 12 to 14 muffins.
